Coconut Cream Pie

Ingredients:

1 (15oz) pie crust
14 oz light coconut milk
1 1/3 cups half & half
3/4 cup granulated sugar
1/3 cup corn starch
3 egg yolks (beaten)
1/4 tsp salt
1 cup Coral Bay Sweetened Coconut
1 cup Coral Bay Toasted Coconut
8 oz whipped topping

Instructions:

  1. Pre-heat and bake pie crust per package instructions.
  2. In a sauce pan, over medium heat, combine coconut milk, half & half, sugar, corn starch, eggs, and salt.
  3. Bring to boil, stirring constantly, then remove from heat.
  4. Stir in 1 cup of sweetened coconut flakes. 
  5. Pour in shell and refrigerate until firm (1-2 hours).
  6. Add whipped topping and toasted coconut flakes.
